3 Part Ab Workout and a Cha-Cha

Good morning!

I apologize for my absence all week, especially after last week when I really had my blogging act together and made you think I was reliable. I blame school.

Im using this to make me feel better about my week of no blogging:

A quick recap of my workouts this week in case you were dying to know…

Monday: Ab workout

Tuesday: 4 mile run/1 hr Spin class

Wednesday: Arm supersets

Thursday: 4 mile run

Friday: Core workout

Guess what? As compensation for me not posting anything as usual, I came up with a killer core workout for you! Yayyy!!!

As for food this week, Im afraid I have no new recipes for you yet. My lunch every day has looked like this:

IMG_5606Kale salad with tomatoes, chicken, and sweet potatoes. Ive also been eating a lot of these Paleo Pumpkin Pie Muffins. (Fun Fact: I have more in the oven right now.)

Ok so I lied about the no recipes thing. I do have a fab gluten free blueberry muffin recipe for you, I just need to make them again so I can take pictures for the post. Hopefully that can happen this weekend 🙂

Coconut Almond Butter Cookies – Paleo

Good morning!

I’m enjoying my last few minutes of sanity before the craziness of college begins. I feel like no matter how many maps I draw in my planner, Im still going to get lost finding a class…

On a random note, I’ve been on a serious nut butter kick lately. Like 2 jars a week, plus other things made out of nuts. Therefore when I realized the need for cookies in my life, they had to be made with almond butter.

Coconut Almond Butter Cookies

Gluten Free/Dairy Free/Paleo

Ingredients:

  • 3/4 cup Almond Butter
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey
  • 1 egg
  • 1 tsp baking soda
  • 1/4 cup chocolate chips (optional, but highly recommended)

Directions:

  • Preheat Oven to 350
  • Mix all ingredients together in a bowl
  • Roll into one inch balls and then flatten them the way your mom used to make peanut butter cookies (makes about 15-20 small cookies)
  • Bake for 8 minutes
  • Let cool and enjoy!

These are definitely a bit “healthy” tasting, but I still found them to be delicious!

A PR and Sweatshirts

Good afternoon!

This morning I did a 30 minute strength training session, and then set a new PR for two circuits that I like to do. They’re both a series of squats and burpees and things like that and I like to try them every once in a while to see if I can improve my time. I beat both of my old records by about 1 minute, so it’s probably going to be a good day in general for me 🙂

Another highlight has been these strawberries. Mmmm.

Is anyone else having a really hard time not spending all of their money on the new running stuff at Lululemon? Please tell me I’m not the only one. I need to hire someone to repeatedly tell me that I don’t need 5 sweatshirts, because thats the number that I want to buy. One for yoga, one for running, one for cycling, one for rest days, and one just because it has thumb holes. I have a problem.

I’m trying to distract myself with paleo cookies. It’s not working.

Ok, well it lasted for a little while.

 I’m super excited to have 3 gyms, a pool, and lots of running area at my disposal. I’m also kind of excited for my Exercise Science course this semester.

Clearly I’ve got my priorities in line.

The real challenge is going to be finding enough food to last me through a whole day at college until I finally get to go home to a good meal.

Thankfully I’ve had some practice in this area and I think with enough meal prep, I’ll be able to go through my classes without my stomach making whale noises.

But for now, It’s movie time on my last night of summer vacation.

The Great Gatsby has always been my favorite book. I know a lot of fans of the book didn’t like the movie, but I think it’s pretty great.

Now where’s my jar of peanut butter….

I have an old hand-me-down North Face. My years of withdrawal are probably what are sparking my sudden obsession. I knew it wasn’t my fault!
